Injera is a large sourdough flat bread. To set an Ethiopian table, one lays down a circular injera on top of which
the other food is arrayed, directly, without any plate. Other injeras are served on the side and torn into pieces
to be used as grabbers for the food on the "tablecloth" injera. Eventually, after the meal is finished, you eat the tablecloth, a delicious repository of the juices from the food that has been resting on it. GODIN TIBS – Lamb ribs pan-fried with garlic, red onion, tomato, green chilli and traditional spicies served with salad & injera.

The indigenous coffee trees (which some experts say, are the only native coffee trees in the world) first grew in ancient "Abyssinia," which is now present day Ethiopia. These trees blossomed in an area called "Kaffa" and the trees were called "Kafa," which may as well be the root word for coffee. DessertBOOLA Banana root & custard dessert.

Ethiopians do not use eating utensils. Pieces of the injera are torn off with the fingers of the right hand and used to scoop up and slightly compact the food. This can be a bit tricky for those unused to Ethiopian manners, but Ethiopians are aware of this, and are often actually surprised when a foreigner manages to eat properly. It is considered rude to use the left hand at the table. Eat only the food closest to you: don't reach across the platter to snag some delicacy that is sitting in front of someone else.
